ABOUT Gajar Gobi Shalgam Ka Achar RECIPE

Pickle is prepare usually during winters in Northern part of India, and goes well with chole bhature, parathas and naan.

Ingredients Serving: 10

  1. 250 gms Cauliflower
  2. 250 gms Carrot
  3. 250 gms Turnip
  4. 500 ml Water
  5. 250 ml Mustard Oil
  6. 70 gms Ginger
  7. 1/4 tsp Asafoetida / Hing
  8. 1/2 tsp Turmeric Powder
  9. 2 tbsp Red Chilli Powder
  10. 2 tbsp Salt
  11. Pickle masala (1 tbsp Fenugreek Seeds, 1 tbsp Fennel Seeds,1 tbsp Mustard Seeds- grind into the powder)
  12. 2 tbsp Garam Masala
  13. 125 ML white vinegar
  14. 100 gm jaggery

Instructions

  1. TAKE 250 GMS CAULIFLOWER, 250 GMS CARROT, 250 GMS TURNIP
  2. CUT INTO FINGER CHIPS OR BITE SIZED PIECES.
  3. HEAT 500 ML WATER IN A WOK
  4. WHEN IT'S HOT ENOUGH, ADD VEGGIES
  5. COOK FOR 3-4 MINUTES
  6. NOW PASS THEM THROUGH A SIEVE
  7. SPREAD THE VEGGIES ON KITCHEN TOWEL
  8. DRY THEM IN SUNLIGHT FOR 6-7 HOURS.
  9. MEANWHILE BURN 250 ML OF MUSTARD OIL IN A WOK
  10. WHEN OIL IS BURNT, OFF THE FLAME
  11. ON LOW FLAME, ADD ASAFOETIDA
  12. 70 GM OF GRATED GINGER
  13. 1/2 TSP TURMERIC POWDER, 2 TBSP RED CHILLI POWDER, 2 TBSP SALT
  14. 3 TBSP PICKLE MASALA ( FENNEL, MUSTARD & FENUGREEK SEEDS POWDER- 1 TBSP EACH) 2 TBSP GARAM MASALA
  15. ADD VEGETABLES
  16. MIX WELL
  17. IN ANOTHER WOK HEAT 125 ML OF WHITE VINEGAR
  18. ADD 100 GM JAGGERY
  19. ONCE IT MELTS, OFF THE FLAME & LET IT COOL
  20. ADD THE COOLED JAGGERY MIXTURE TO THE VEGETABLES. MIX WELL
  21. STORE IT IN A CLEAN GLASS STERILIZED JAR,
