Boil gobhi florets in water for 2-3 minutes Boil gajar as well for 2-3 minutes Completely drain and dry the florets .
Dry the veggies otherwise moisture will spoil the achar. You may dry veggies in the Sun or under a fan.
Grind mustard ,Saunf and methi dana coarsely Boil vinegar in a pan. add gud. Stir till it dissolves completely.
Heat Mustard oil till smoke comes
Cool for a while then add all the masalas and mix well. then add gobhi ,gajar ginger pieces Green chillies. Mix well add vinegar and gud . Mix again thoroughly.
Your gobhi gajar achar is ready. Keep in an airtight jar and enjoy the pickle
