ABOUT Achari Gobi RECIPE

Gobi florets are cut into big chunks,deep fried,sautéed in onion -tomato and flavoured with pickled spices.It's a dry vegetarian side dish ,which goes perfectly for serving with steamed rice or with a naan or simple chapati.

Ingredients Serving: 4

  1. Cauliflower. 1 Large
  2. Ingredients for Achari Masala:
  3. Dry red chilli 1-2 no
  4. Methi Dana/Fengureek seeds . 1/2 teaspoon
  5. Jeera. / cumin seeds 1/2 teaspoon
  6. Rai Dana./Mustard seeds 1/2 teaspoon
  7. Kalonji seeds/Nigllea seeds 1/2 teaspoon
  8. Dal chini/Cinamon stick 1 Small
  9. Ingredients for Tadka:
  10. Oil. For Deep frying
  11. Rai Dana 1/2 Tsp
  12. Jeera. 1/2 teaspoon
  13. Onion chopped. 1 Medium
  14. Ginger Garlic Paste. 1 teaspoon
  15. Haldi 1/4 teaspoon
  16. Tomato chopped. 1 Medium
  17. Curd 1 tablespoon
  18. Achari Masala. 1 tablespoon
  19. Chopped coriander. 2 tablespoon
  20. Salt to taste

Instructions

  1. Dry roast all the Achari masala ingredients in a medium flame.Until get nice aroma.
  2. When cool down grind in a mixer grinder to a coarse powder.
  3. Heat enough oil in a Kadai.
  4. when the oil is hot enough deep fry the gobi florets until little brown in colour.
  5. Drain the excess oil and place the fried gobi on a tissue paper.
  6. In another pan add 2 Tbsp oil ,when oil is hot add rai .
  7. When rai splutter add in jeera and let is crackle for few seconds.
  8. Add finely chopped onion,and sauté well till they are translucent.
  9. Add ginger garlic cook until the raw smell goes completely.
  10. Add Haldi,chopped tomatoes,salt and sauté well.
  11. when oil starts separating add curd and mix well.
  12. Next add Achari masala and fried gobi florets mix well .
  13. Cover and cook for few minutes on low flame.
  14. Add chopped coriander leaves.
  15. Achari gobi is ready to serve.
