ABOUT Ragi Mudde With Side Dish RECIPE

Ragi Mudde is a very healthy recipe which is prepared only with ragi flour. Served with dal /leaf vegetables or simply served with curd. A rustic and wholesome dish that is very popular in the southern parts of India, particularly Karnataka and Andhra Pradesh. Ragi mudde is nothing but a preparation using ragi flour and water, it is prepared in a special pan. The dish gets its name from the special wooden spoon that is used to make them called mudde kolu. In recipe of ragi mudde, ragi flour is mixed with water and cooked on a low flame till soft, lump-free balls are formed. This snack is very versatile and is a staple in homes in Karnataka. It is usually served with a side dish like Karnataka style bassaaru or chicken curry. Some ragi mudde recipes can also have onions, green chillies and curry leaves as aromatics. This side very nutritious as it is made of Ragi and nothing else.

Ingredients Serving: 2

  1. For Ragi Mudde :
  2. Ragi /Finger Millet Flour - 1 cup
  3. Water - 1 1/2 cups
  4. Salt -1/2 Tsp
  5. Ghee - 1 tsp
  6. For Spinach Gravy:
  7. Spinach Or any green leaves - 2 cups(Washed & chopped)
  8. Onion - 1 (finely chopped)
  9. Tomato - 1 (finely chopped)
  10. Slit green chilli - 1
  11. Garlic cloves - 2 (finely chopped)
  12. Tamarind extract -1/8 cup
  13. Sambar Powder -2 tsp
  14. Water -1 cup
  15. Salt - to taste
  16. For Tadka
  17. Oil - 2 tsp
  18. Mustard seeds -1/4 tsp
  19. Jeera -1/8 tsp
  20. Hing - 1/8 tsp
  21. Other Ingredients :
  22. Curd -1 cup (Whisked well with little salt)
  23. Ghee - As needed

Instructions

  1. In a vessel boil 1 1/2 cups water with salt.Add the ragi flour and cover with lid for a minute. Then mix it well with back of the wooden ladle without any lumps.
  2. Again cover with lid and cook for a minute and switch off the flame. Grease the plate with little ghee and transfer the mudde to it.
  3. Wet your hands with cold water and make ragi balls. Now Mudde is ready to serve.
  4. Heat oil in a pan add the mustard seeds, once it splutter add the hing and jeera. Then add the chopped garlic cloves and green chilli, saute it for a minute.
  5. Then add the chopped onion, saute it until it turns translucent. Now add the chopped tomato and required salt. Once it turns mushy add the chopped spinach and sambar powder.
  6. Once the spinach is reduced in size add the tamarind extract and 1 cup water. Boil it well.Once the raw smell is goes away, switch off the flame.
  7. The Spinach Gravy is the best combination for Ragi Mudde. Serve the Ragi Mudde with Spinach Gravy or Curd or Ghee.

In this recipe is really nice and good for me. I have try in my home. My husband is like to eat for this recipe. More dishes are available in this blog post. I am really like this. I have prepared for Ragi packoda and other types of healthy recipes in my kitchen. My friend is visiting my home. She is like to eat the fish curry and fish related item. I have cooked very tasty and good flavors are added with that. So she ask me to ready for that. I am happy to see her and i have make that item within 20 minutes. She is eating very well. In your recipe is health for the body. And it is getting some of style to cook; my kitchen is getting verity of products and things to add with the fry items. It is given good taste for the recipe and smell also. I am getting tied for making those in one day. But i like to make for my family. I have taken more time for delicious food cooking. I am enjoying the functions and some important festivals with my family members. My style of cooking is different when compare to others. I have got the cooking books as more.
