Ingredients Serving: 3

  1. Tindora - 200 gm, cut in thin rings
  2. Potato, small - 1. cut in small cubes
  3. Onion - 1
  4. Ginger, minced - 1/2 tsp
  5. Garlic pods - 3, minced
  6. Green chilli - 2, chopped
  7. Turmeric powder - 1 tsp
  8. Cumin powder - 1 tsp
  9. Chilli powder - 1/3 tsp
  10. Coriander powder - 1/3 tsp
  11. Coconut, scrapped - 1 tbsp
  12. Coriander leaves, chopped - 1 tbsp
  13. Curry leaves - 15
  14. Black mustard seeds - 1/2 tsp

Instructions

  1. Wash and cut tindora and potato. Cut onion in slices.
  2. Heat oil in a nonstick pan. Add black mustard seeds, let them splutter then add onions, ginger and garlic. Saute for 2-3 minutes.
  3. Add curry leaves, green chilli, turmeric powder, cumin powder, coriander powder and chilli powder, add a tsp water too. Saute for a minute.
  4. Add potatoes, tindora and salt then cover and cook for 10 mins. Stir in between, add some water if needed.
  5. Add tomatoes, stir and again cover and cook for 2-3 minutes. Now add grated coconut and stir.
  6. Turn off the stove, garnish the vegetable with chopped coriander and serve hot with rice or roti.

Very nice recipe. Made it with Zuccinni instead of potatoes..
