Ingredients Serving: 7

  1. Chicken leg pieces 7 skinless
  2. Fresh lemon juice 4 tablespoons
  3. Turmeric powder 2 teaspoons
  4. Kashmiri red chilli powder 3 -4 teaspoons
  5. Salt 1.5 teaspoon
  6. Tandoori masala powder 1 tablespoon
  7. Orange food colour ( optional ) 2 drops
  8. Kasuri methi crushed 1 teaspoon
  9. Ginger garlic paste 2 teaspoons
  10. Hung waterfree curd 4 tablespoons
  11. Butter 4 tablespoons
  12. White pepper powder 1 teaspoon

Instructions

  1. Firstly , make small cuts on the cleaned chicken legs .
  2. Marinate the chicken legs with lemon juice , half the salt and a teaspoon of turmeric powder . Rub them on the chicken using fingers for better masala penetration .
  3. Cover and rest for 15 minutes .
  4. In a wide bowl , take hung curd .
  5. Add ginger garlic paste , salt , turmeric powder .
  6. Add tandoori masala powder , Kashmiri red chilli powder , Kasuri Methi powder .
  7. Sprinkle 1/2 teaspoon white pepper powder .
  8. Add orange colour .
  9. Finally add remaining lime juice . Adjust lime juice and spice levels as per your taste .
  10. Now add the marinated chicken to this second marination masala .
  11. Rub the masala over the chicken thoroughly with fingers .
  12. Refrigerate the marinated chicken legs for minimum 3 hours . Overnight marination gives best result which I highly recommend .
  13. Heat a tablespoon butter in a grilled pan .
  14. Now place the marinated chicken legs along with the masala on the hot butter
  15. Slow grill in low flame .
  16. Drizzle butter on the chicken legs .
  17. Slow grill the chicken legs both the sides . Keep pushing and spreading the masala over the chicken for better taste and colour .
  18. When the chicken gets 70 % cooked , place a hot coal piece on a small bowl . Place that coal bowl in the centre of the grilled pan . Cover the grilled pan and slow grill the chicken for another 5 to 7 minutes till the chicken gets that tandoor effect .
  19. Slow grill till the entire masala gets dried up , until chicken legs gets tandoored perfectly.
  20. Take the coal out .
  21. Sprinkle white pepper powder finally . This step is optional .
  22. Restaurant style Tandoori chicken without oven is ready .
