Melt butter in a Handi .
Add cloves , bay leaf , cinnamon stick , cardamoms . Fry till aroma releases.
Add green chillies .
Add ginger garlic paste and sauté until raw smell leaves .
Pour the ground onion paste . Add 1/2 teaspoon chopped ginger. Sauté for a minute .
Pour the tomato purée .
Sauté well in the butter till red .
Add the dry powders one by one excluding nutmeg powder .
Add salt . Adjust accordingly as tandoori chicken already contains salt .
Add yogurt .
Add cashew paste . Mix all . Cover and cook till oil oozes from the curry .
Then add crushed Kasuri Methi , tandoori chicken pieces .
Cover and slow cook in low for 7 minutes till chicken pieces looks soft .
Add water in between it really needed to adjust the consistency . Thick Gravy consistency is preferred .
Finally add nutmeg powder . Mix .
Add fresh cream . Stir till combined in low heat . Switch off .
Tandoori Chicken Handi is ready .
Garnish with ginger slices .
Serve hot with your favorite rotis / breads .
