ABOUT Mandiya Pitha RECIPE

Ragi (finger millet) is called as Mandia in Oriya. These pancakes made from ragi, rice and coconut serve as an excellent source of nutrition. Mandiya pithas are soft and fluffy pancakes that can be eaten at any time of the day.

Ingredients Serving: 4

  1. 1/2 cup Ragi flour/Finger millet flour
  2. 1/2 cup rice flour
  3. 1/2 cup fresh coconut
  4. 1/2 cup water
  5. 1/4 tsp cardamom powder
  6. 1/2 tsp baking powder
  7. 2 tbsp ghee
  8. A pinch of salt

Instructions

  1. Grind coconut to a fine paste in a mixer.
  2. Add all the ingredients except ghee and make a thick batter without any lumps. Keep the batter aside for 30 minutes.
  3. Grease the griddle with ghee and add a ladle full of the batter. Do not spread the batter. Cover and cook until the edges turn golden brown.
  4. Flip the other side, add ghee and cook for 2 minutes.
  5. Serve it hot with some Nolen gur (jaggery) syrup.
