I love to use fruit curds in my baked recipes.

Ingredients Serving: 4

  1. FOR THE MANGO CUPCAKE
  2. 1 cup Rawa
  3. 1 cup mango pulp cooked
  4. 1/ 4th cup butter
  5. 3/4 th cup Sugar
  6. 1 tsp baking pwdr
  7. 1/4th cup sliced pistachios
  8. FOR THE MANGO CURD
  9. 1 cup mango chopped( use Alphanso)
  10. 1/3 rd cup sugar( i didnt use full as the mango was sweet)
  11. 2 tsp Lemon juice
  12. 4 egg yolks
  13. 4 tsp butter
  14. OPITIONAL
  15. saffron strands
  16. Cardamom pwdr

Instructions

  1. FOR THE CUP CAKES
  2. Mix the rawa , sugar & baking powder
  3. Add melted butter and mix
  4. Add the cooked mango pulp and mix.
  5. Let it sit for sometime
  6. Pour the batter in cupcake moulds
  7. Preheat the oven to 180 D Celsius and bake the cup cakes for 30 to 35 mins till a toothpick inserted comes out clean
  8. FOR FROSTING
  9. MANGO CURD Puree the mango with sugar
  10. Add egg yolk 1 at a time and pulse again
  11. Keep scrapping the sides
  12. Pulse till all the yolks are used up
  13. Remove in a bowl
  14. On a double boiler place the mango puree and whisk till it thickens
  15. Approximately 10 mins
  16. Once thick add butter
  17. FILL the mango curd on a piping bag and frost the cupcakes
  18. Sprinkle with pistachios and some saffron strands
  19. You can also sprinkle some cardamom powder
