Eggless and whole wheat flour mango cupcakes

Ingredients Serving: 6

  1. Whole wheat flour - 100 gms
  2. Milk powder - 15 gms
  3. Cornflour - 5 gms
  4. Sugar-70 gms
  5. Oil-40 gms
  6. Fresh Mango pulp - 140 gms
  7. Vinegar - 1/2 tspn
  8. Milk - 1/2 cup
  9. Baking soda - 1/2 tspn
  10. Baking powder - 1/2 tspn
  11. Sliced almonds for garnishing - 1 or 2 tbspns

Instructions

  1. Measure all dry ingredients except sugar and mix baking powder and baking soda.
  2. Sieve this mixture for 4-5 times and keep aside.
  3. Clean mango and take out it's pulp.
  4. Measure sugar+oil. Add milk and mix till sugar dissolves.
  5. Add dry ingredients to wet ingredients and mix nicely.
  6. Add vinegar and keep aside for 1-2 mins
  7. Line cupcakes tray with paper liner.
  8. Fill moulds upto 3/4 th with batter.
  9. Garnish with sliced almonds
  10. Bake in preheated oven at 180 degrees for 20-25 mins.
  11. Check with toothpick and if it comes clean then cupcakes are done.
  12. Take them out, keep on wire rack for cooling and then serve.
