Ingredients Serving: 4

  1. For Sarso da saag:-
  2. 1 bunch of Green mustard leaves 500 gm
  3. 2Tomato chopped
  4. 1 onion chopped
  5. 2 green chillies chopped
  6. 1 tbsp ginger-garlic paste
  7. 3 tbsp oil
  8. 1 tbsp Makka flour
  9. hing 1 pinch
  10. 1/4 tsp Jeera(cumin seeds)
  11. 1/2 tsp red chilli powder
  12. 1/4 tsp turmeric powder
  13. Salt to taste
  14. For makke di roti:-
  15. 2cups Makai Atta (maize flour)
  16. Warm Water as needed to bind the dough
  17. 1 teaspoon Carom Seeds crushed (ajwain)
  18. Salt to taste

Instructions

  1. Wash sarso leaves and cut them into pieces.
  2. Boil sarso leaves in pressure cooker by adding 1/2 cup water . Cover lid and take one whistle. Off the flame and let be cool down it.
  3. Now make a fine paste of boiled mustard leaves and a fine paste of tomato and onion separate in grinder.
  4. In a kadhai on medium flame heat oil. Put hing and jeera in oil.
  5. Now add ginger garlic and onion paste and flour. Roast it for one minute.
  6. Add tomato paste and saute it for one minute.
  7. Add turmeric powder,red chilli powder,salt and mix it till oil separates from masala.
  8. Now add mustard leaves paste and mix it.. Cook it for 5 minutes on low flame. We can add 1/2 cup of water if we want to make curry. Saag is ready.
  9. Making makke di roti:-
  10. Sieve the maize flour in a large bowl ,add salt and make a smooth dough by adding water.
  11. Now divide the dough in equal portion. And roll it into 4"diameter by applying some flour.
  12. Heat gas tandoor on low flame for 5 minutes. Cover it with lid. Keep all rolled roti on heated gas tandoor plates. Cover and cook it for 3-5 minutes.
  13. Turn them over and cook it from other side till properly cooked.
  14. Now cut makke di roti from mid and divide it into two semi circle parts. Apply some sarso ka saag on one part and cover it with another part.
  15. Serve these cute healthy sarso saag -makke di roti sandwich with pickle and buttermilk.
