ABOUT Sarsoon da saag Makki de roti RECIPE

The classic Punjabi dish: Sarsoon da saag te makki di roti. Best had with some white butter, jaggery or honey.This winter special combination of meal makes everyone drool in winters. As a traditional punjabi dish, saag means green and sarso means mustard. Along with a steaming hot makki roti and a dollop of butter or ghee this recipe is a yummy and lip smacking treat in winters.

Ingredients Serving: 4

  1. 500gm Sarson Da saag
  2. 500gm palak saag
  3. Water for blanching
  4. 4 no green chillys
  5. 1 ladel Oil or desi ghee
  6. 35 gm Ginger, garlic paste
  7. 2 no big onions chopped
  8. 3 tomato's blanched and pureed
  9. Red chilly powder Acroding taste
  10. Garam masala powder Acroding taste
  11. Salt Acroding taste
  12. For makki de roti
  13. Equal amount of Makki da aata and wheat flour
  14. Meduim hot water
  15. Salt acroding teast

Instructions

  1. Blanch both saags palak n sarson in boiling hot salted water for 5 minutes
  2. Squeez out the saags and let it cool for some time then grind it into paste
  3. Bblanch the one onions in boiling hot salted water till become transparent then strain the onion and after cooling grind it in paste
  4. Blanch tomatos for few minutes then let it cool and puree it
  5. In a pan put oil or desi ghee let it bit heat then add ginger garlic paste saute for a minute or till raw aroma goes
  6. Now add remaining chopped onion saute until onions are light brown
  7. Add tomato puree n saute till leave oil from sides
  8. Add onion paste all dry spices saute for few seconds and mix well
  9. Add saag paste salt and mix well n simmer for few minutes
  10. Serve with butter on top with makki ka roti
  11. Steps For makki ka roti
  12. Knead the makki atta and wheat flour with medium hot water until it becomes a ball.
  13. Heat the tava and add a little ghee so that it does not stick.
  14. Make round shapes of makki roti on chakla & carefully transfer to the tava.
  15. Cook with ghee till golden brown.
  16. Serve with hot sarson da saag and gur and white butter.
