ABOUT MAKKI KI ROTI AND SARSON KA SAAG RECIPE

Today i have prepared famous and traditional breakfast of punjab.In punjabis it is considered to be heaven to have Makki Ki Roti with Sarson ka Saag and with homemade butter.There’s nothing like Sarson Ka Saag and Makki Ki Roti to beat the winter chill.

Ingredients Serving: 5

  1. For Sarson Saag:
  2. 1 kilogram Sarson Ka Saag
  3. 1/2 kilogram Spinach
  4. 2 green chillis chopped
  5. 10 Flakes of garlic
  6. 20 grams Ginger
  7. 2 large onions (chopped)
  8. 2 large tomatoes (grated)
  9. 1 teaspoon cumin seeds
  10. 1/2 Teaspoon Asafoetida
  11. 1 teaspoon red chilli powder
  12. 1 teaspoon garam masala
  13. 1 tablespoon desi ghee
  14. 1/2 cup corn meal
  15. Ingredients for Makki Ki Roti:
  16. 1/2 kilogram Makki Ka Aata(corn meal)
  17. Carrom seeds 1/2 teaspoon
  18. Salt according to taste

Instructions

  1. Remove the stems and wash sarson ka saag and the spinach and cut them into small pieces.
  2. In a pressure cooker cook the saag, spinach, garlic, green chilli, ginger, salt and 200 ml water.
  3. After the first whistle, lower the heat to simmer and cook for 30 minutes.Leave until it gets cold.
  4. Grind the cooked vegetables into a paste adding corn meal to desired consistency.
  5. In a pan, heat a tablespoon of ghee and fry onions.
  6. Add asafoetida, garam masala and red chilli .When the oil separates, your masala is ready.
  7. Add the saag paste and cook on low heat for 20 minutes.
  8. You can add hot water if the saag paste is thick.
  9. Serve with homemade butter.
  10. For Makki Ki Roti(corn meal parantha):
  11. Take lukewarm water and make a dough adding salt and carrom seeds . leave it for 15 minutes.
  12. Take a plastic sheet on a rolling board. Roll a bit of the dough into a small ball.
  13. Add a little oil and pat it into a circular shape.
  14. Heat the tawa and place the Makki ki Roti on low heat.
  15. Cook the roti adding few drops of cooking oil on both sides.
  16. When it is cooking take a fork or sharp edge knife and pierce all over, so that it will also cook from inside.
  17. Serve this with saag adding home-made butter or desi ghee.
  18. Yummy and healthy breakfast is ready to relish.
