An interesting twist to the regular makai ki roti.Corn flour or makai atta is definitely tough to handle, the rotis are fragile and break. So I decided to give it a different form where there is no compromise in the taste and makes boring lunch interesting and wholesome.
Very unique recipe, would love to try it out very soon..
First pressure cook the saags with garlic ,ginger,salt,chillies.
Cool,strain and blend to a puree
In a pan ,heat ghee, add chopped onions,fry till slightly translucent.Now add the saag puree,stir continuously
Add turmeric,cumin ,salt and cook for a while ,finally add tomatoes and cook till oil starts leaving the sides.Add a little water if it turns too dry.Keep aside.
For the muffins,add soda to yoghurt and leave for 5 mins.
Mix makai ka atta, flour, baking powder, sieve 2 - 3 times.
Now add the yoghurt mix to the atta mixture.Mix well,the batter should not be very watery nor thick.You can add more yoghurt if its too thick.
Finally add oil and salt and mix well
Spoon 2 tsp of the saag into a muffin mould .Pour the atta mixture on top.
Bake at 180 degrees C in a preheated oven for 20 - 25 mins
Yummy corn muffin with sarso da saag is ready
