Traditional Fish stew cooked in coconut milk and palm oil. Tastes best when served with garlic rice or crusty bread
I really want to try this.
Marinate fish fillet pieces with garlic ,lime juice , salt and pepper for 30 minutes
In a large pan , heat oil on medium heat.Add the chopped white onion and cook for few minutes until softened.
Add the bell pepper, paprika, and red pepper flakes with salt and pepper
Note: in case you don't get sweet paprika online, use regular paprika. Do not add sugar to recipe. Stew tastes best with sweet paprika
Add in the chopped tomatoes and green part of spring onions.Cook for 5 minutes.Add chopped cilantro and mix well
Use a large spoon to remove about half of the vegetables .Spread the remaining vegetables over the bottom of the pan evenly
Arrange the fish pieces on the vegetables.Then add the previously removed vegetables, covering the fish. Pour coconut milk over the fish and vegetables.
Bring stew to a simmer, reduce the heat, cover, and simmer for 15 minutes. Adjust seasonings if required
Garnish with cilantro. Serve hot with rice or bread.
