ABOUT Paya (trotters) RECIPE

Spicy paya soup or curry best complimented with naan, breads and ghee rice.

Ingredients Serving: 6

  1. 1 kg cleaned paya
  2. 3 tbsp ginger-garlic paste
  3. 3 tbsp red chilli paste
  4. 1/4th cup chopped coriander leaves
  5. 1 tsp garam masala powder
  6. 1/2 tsp turmeric powder
  7. 1 tsp dhania powder
  8. 2 sliced onions
  9. 2 tomatoes
  10. 1 lemon
  11. 2 tbsp ghee
  12. 2 cloves
  13. 1 small Cinnamon

Instructions

  1. In a pressure cooker, add the paya, sliced onion, ginger-garlic paste, salt as per taste, 1 cup of water and cook till the paya becomes tender.
  2. In a vessel add oil to heat, then add cinnamon, clove. Next, add sliced onions and saute until they turn golden. Add the tomatoes and cook.
  3. Make a paste by mixing chilli powder, coriander powder, turmeric and remaining ginger-garlic paste using a little water.
  4. Add the masala into the vessel and saute for 5 mins. Add in the cooked paya and add water to dilute.
  5. Add salt as per taste and pepper powder, garam masala powder, chopped coriander leaves, lemon. .
  6. Cook this for 5 mins and serve.
