Waking up to this delicious aromatic Paya (lamb trotters) soup with soft flakey rotis and idiyappam (string hoppers). A popular South Indian delicacy enjoyed on special occasions like Eid. Perfect homemade monsoon breakfast to keep away the blues.

Ingredients Serving: 4

  1. Paya (lamb trotters) - 6nos
  2. Onion – 1
  3. Tomato – 1
  4. Ginger garlic paste – 1/4th tspn
  5. Coriander leaves – 2tspn
  6. Mint/ Pudina leaves – 2tspn
  7. Cumin/ Zeera powder – 1/4tspn
  8. Coriander/ Dhanya powder - 2tspn
  9. Red chilly powder - 1tspn
  10. Green chilly – 1
  11. Cinnamon – 1 inch piece
  12. Cardamom – 3
  13. Clove – 3
  14. Turmeric powder - 1tspn
  15. Salt – to taste (add in the end)

Instructions

  1. Roast each Paya lightly on direct flame. Repeat for the rest and set aside.
  2. Heat water about 1litre to boiling. Immerse roasted Paya in hot water for about 15minutes.
  3. Using a blunt knife scrape the roasted ends and also remove impurities/hair. Wash thoroughly and set aside.
  4. Chop onion to fine cubes, similarly chop tomato to fine cubes. In a large pressure cooker add all ingredients except salt. Add about 1to 1.5 litre of water. Cook for 10 minutes with out the lid.
  5. Now place the lid and pressure cook for 7 to 8 whistles or until cooked. Once the pressure is released check for consistency. Add salt according to taste.
  6. Serve hot with roti, paratha or idiyappam (string hoppers).
