ABOUT VEGANS DELIGHT AQUAFABA VANILLA SPONGE CAKE RECIPE

This cake is vegans delight for Christmas and New year. Aquafaba(chicpea water) my secret ingredient is used to make this vanilla sponge cake. Though it's complicated to crack the texture I'm very much happy with the end product. Combination of two teaspoon oil, castor sugar, baking powder, baking soda and vanilla essence are the ingredients used in this recipe.

Ingredients Serving: 4

  1. Chicpea 2cup
  2. Water 5 Cups
  3. All purpose flour 325 gram
  4. Whole wheat flour 325 gram
  5. Castor sugar 375 gram
  6. Baking powder 1/2 teaspoon
  7. Baking soda 1/2 teaspoon
  8. Cream of tartar 1/4 teaspoon
  9. Oil 2tablespoon
  10. Vanilla essence 1/2 teaspoon
  11. Icing sugar 1tablespoon
  12. Strawberries 8
  13. Walnut 8

Instructions

  1. Soak chickpea overnight by washing thrice and pressure cook for 20 minutes.
  2. Strain the boiled chickpea water and keep it aside. This is aquafaba my secret ingredient.
  3. Boil chickpea water till it reduces in quantity. Slimy consistency is the perfect consistency.
  4. Cool aquafaba for few minutes or can refrigerate for few minutes.
  5. Whisk the aquafaba for 15 to 20 minutes till its frothy by adding cream of tartar.
  6. Add castor sugar thrice in between whisking. Should not add all the sugar together.
  7. Whisk till the aquafaba attains stiff peaks.
  8. Fold in all the dry ingredients with vanilla essence using cut and fold method.
  9. Grease the cake tin.Preheat oven at 180 degree centigrade.
  10. Pour the batter and bake for 30 minutes. Cake is done.
  11. Let it cool on a cooling rack.
  12. Demould and sprinkle icing sugar on top of the cake and garnish with strawberries and walnut.
  13. Can cut the cake with cookie cutter and serve it in the party for individual serve.
  14. Yummy spongy vanilla cake is ready for vegans. Christmas or New year without a cake for any individual is not satisfying. This is prepared mainly for vegans keeping in mind.
