This soup is flavoured and relish with spicies, black eyed beans and pasta.

Ingredients Serving: 2

  1. Olive oil 1 tbs
  2. Chopped onion 2 tbs
  3. Chopped carrots 2 tbs
  4. Chopped cauliflower 2 tbs
  5. Chopped French beans 1 tbs
  6. Chopped tomato 2 tbs
  7. Chopped capsicum 1 tbs
  8. Boiled black eyed beans 1/4 cup
  9. Boiled pasta 1/4 cup
  10. Tomato puree 1/4 cup
  11. Vegetable stock 3 cup
  12. Paprika 1 tsp
  13. Oregano / basil 1 tsp
  14. Black pepper 1 tsp
  15. Salt
  16. For vegetables stock
  17. Bay leave 1 small
  18. Cinnamon 1 small
  19. Nutmeg 1 pinch
  20. Ginger 1 small
  21. Coriander 3 to 4 strings
  22. Onion, carrot, garlic, bottle gourd, potato all mix 1 cup
  23. Water 4 cup

Instructions

  1. Take 4 cup of water add all vegetables stock ingredients boil for 30 minutes. Strain it with steiner.And make vegetables stock ready for soup.
  2. Collect all ingredients for soup.
  3. In a saucepan heat oil add onion cook for 2 minutes.
  4. Add vegetables cook for 2 minutes.
  5. Add vegetables stock and tomato puree.
  6. Add boiled black eyed beans in soup and simmer for 10 minutes on slow flame.
  7. Add paprika, Oregon, black pepper powder, salt and boiled pasta. Cook for 2 minutes. And soup is ready to serve.
