ABOUT Pumpkin Potato Subzi RECIPE

Pumpkins are widely grown all over the world and used in many recipes. It is available in many forms. Yellow, White, Desi, Hybrid etc. Pumpkin along with seeds, leaves, flowers are eaten in many countries, its healthy and having lots of mediational properties. Pumpkin pulp is used for making pies, ice creams etc. Seeds are used for preparing oil. Pumpkin seeds are very good source of Protein, Magnesium, copper and zinc. This is a traditional Maharashtrian subzi recipe called as “Bhoplyachi Bhaji.” It is very simple, tasty recipe and can be cooked in lesser time.

Ingredients Serving: 4

  1. Yellow Pumpkin Raw– 1 cup
  2. Potato– 1 small, washed, Peeled, cut into cubes.
  3. Mustard seeds – 1/2tsp
  4. Cumin seeds – 1/4th tsp
  5. Onion chopped finely – 1/2 medium
  6. Garlic crushed – 1tsp
  7. Kashmiri Red chilii – 2 Broken, Deseeded.
  8. Garam masala – 1tsp
  9. Turmeric powder – 1/4th tsp
  10. Asafoetida – a pinch
  11. Coriander Leaves – 1tbsp Finely chopped
  12. Fresh Grated Coconut – 1tbsp
  13. Oil –1tbsp
  14. Salt - as per taste
  15. Water as required

Instructions

  1. Wash Pumpkin and Potato. Peel and cut them into cubes.
  2. In a nonstick pan or heavy bottom kadai or utensil, heat oil
  3. Add mustard seeds, Cumin seeds. Let it splutter
  4. Add onion. Cook till translucent. Add garlic, red chili, salt. Cook for few seconds.
  5. Add turmeric powder, garam masala and asafoetida. Cook well.
  6. Add potato cubes. Cover it with plate. Add warm water into the plate and cook on steam keeping low flame. If required add 1 tbsp. hot water. Let it dry and cook half.
  7. Add pumpkin cubes. Stir well. Steam cook on low flame for 3-4 minutes. Keep checking in between to avoid overcooking. No need to add additional water.
  8. Add Grated coconut and chopped coriander. Mix well
  9. Serve hot with dal rice or Chapati.
