Ingredients Serving: 3

  1. Pumpkin cubed 400 gms
  2. Minced ginger 1/2 tsp
  3. Yogurt 1/2 cup
  4. Tomato 1 small
  5. Green chilli 2
  6. Whole cumin seeds and black mustard seeds 1/4 tsp
  7. Curry leaves few
  8. Cloves 2
  9. Cardamom 1
  10. Cinnamon 1 small piece
  11. Asafoetida 1/3 tsp
  12. Curry powder 1 tsp
  13. Garam masala powder 1/4 tsp
  14. Salt
  15. Chilli powder 1/3 tsp
  16. Chopped coriander for garnishing

Instructions

  1. Wash and cut pumpkin in cubes
  2. Chop tomato
  3. Heat oil
  4. Add whole cumin and rai seeds
  5. Saute for 30 seconds
  6. Add curry leaves and hing
  7. Also add ginger, cloves, cardamom and cinnamon sticks
  8. Again saute for 30 seconds
  9. Now add curry powder and chilli powder
  10. Add 2 tsp water
  11. Saute for 1_2 mins
  12. Add pumpkin pieces
  13. Cover and cook for 15 _ 20 mins
  14. Stir in between
  15. Now add chopped tomato and salt
  16. Again cover and cook for 5 mins or until tomatoes are soft
  17. Now add yogurt and green chilli
  18. Mix well
  19. Add 1/2 cup water
  20. Cook in medium heat another 7_8 mins
  21. Add garam masala powder
  22. Garnish with chopped coriander leaves
  23. Serve hot with phulka or roti

Made this dish exactly as per mentioned method. Ended up with a dark pumpkin gravy dish grated ginger and whole spices separate. I guess we have to have these ingredients as side dish.
