zeppole is a italan fried doughnut but prepared with pumpkin and usually this doughnuts are filled with chocolate sauce but I Filled it with pumpkin caramel..soft and spongy zippole tastes so yumm with pumpkin caramel

Ingredients Serving: 6

  1. All purpose flour 1/2cup
  2. pumpkin grated 1/3cup
  3. Egg 1
  4. Honey 1tbsp
  5. powdered sugar 1-2tsp
  6. recotta cheese 3tbsp
  7. Baking powder 1tsp
  8. Salt Pinch
  9. Vanilla essence Few drops
  10. Oil for frying
  11. for pumpkin caramel
  12. Sugar 1/2cup
  13. butter(unsalted)2tbsp
  14. fresh cream 1/4cup
  15. pumpkin pury 1/4cup
  16. Vanilla Essence

Instructions

  1. Take a vessel add all purpose flour and grated pumpkin in it
  2. Add little beaten egg and ricotta cheese in it And mix well
  3. Add sugar honey salt and baking powder in it
  4. Add vanilla essence and mix well prepare mixture
  5. Heat in a deep pan and pour small balls like shape of mixture in it
  6. Fry them till golden colour on medium flame You can see the size of balls get increased while frying
  7. Your pumpkin zeppole is ready
  8. For caramel grind pieces of pumpkin in a mixer grinder and make a fine pury of pumpkin
  9. Now for caramel heat sugar in a pan on low flame stir it conteneuosly
  10. As sugar converts in amber(light golden)colour syrup add butter In it mix well
  11. Add cream and pumpkin Pury and mix so well that there should not lump formation in mixture
  12. Add vanilla essence Mix contineously till the mixture become smooth and little thick
  13. Switch of the flame remove the prepared caramel in a bowl let it cools down completely
  14. Now time to assemble make a cavity in zeppole by making a deep hole in the middle of it
  15. Fill the caramel in a piping bag and pour the caramel inside each zeppole
  16. Sprinkle some powdered sugar over them and ready to serve
