ABOUT Khichu/ Spicy Steamed Rice Flour RECIPE

Khichu is steamed and spicy rice dough from Gujarat. In Gujarat people made this dough for making rice papad and sev but now mostly people just enjoy anytime this steamed dough with achar masala groundnut oil and garlic chatni.

Ingredients Serving: 5

  1. Rice flour 1 big bowl
  2. Crushed Green chilli 12/15
  3. Water 4 to 5 glass
  4. Ajwain less then 1 tsp
  5. Jeera 1 tsp
  6. Fresh chopped coriander leaves 3 / 4 tbsp
  7. For serving :
  8. oil
  9. Achar Masala
  10. Garlic chatni (optional)

Instructions

  1. Keep ready rice flour salt ajwain jeera water and chopped coriander leaves.
  2. Take a big bowl add water and keep on flame for boiling.
  3. Add jeera and crushed green chilli in to the water.
  4. Keep boiling.
  5. Now add ajwain and chopped fresh coriander leaves.
  6. Now water is ready
  7. Now start adding flour into the mixture of boiling water and keep stirring.
  8. Now keep adding flour and mixing with rolling pin.
  9. Keep stirring continuously without intervals. Make sure there were no lumps into the mixture.
  10. Now take large kadai or dhokla cooker or steamer for next step. Add water for boiling.
  11. When water start boiling keep flour mixture bowl in it for steam the dough.
  12. Now lid it for 20 minute still it done.
  13. After 20 minute steamed dough is ready to serve.
  14. Now give good mix
  15. Serve with achar masala and groundnut oil.
  16. I served this with achar masala garlic chatni and oil mixture. Serve in your style
