Yes....u read it right, this name clicked in my mind while sitting on the beach of Goa, I was eating chocolate pastry and watching the moon..at that time only I decided to name my dish GOA MOON:smile::smile: ...pearls depict the shells my son collected on the beach..salted caramel depicts the salty water

Ingredients Serving: 6

  1. 125 g butter
  2. 165 g all purpose flour
  3. 65 g rice flour
  4. 65 g castor sugar
  5. 1/2 tea spoon sea salt
  6. 200 g Chocolate
  7. For Caramel
  8. 50 g butter
  9. 50g brown sugar
  10. 400 g milk maid
  11. For caramelized strawberry
  12. 1/2 tea spoon butter
  13. 100 g strawberries
  14. 1 spoon milk maid
  15. 1/4 cup water
  16. 1/4 cup sugar
  17. Ingredients for moon
  18. 1 cup white chocolate
  19. 10 inch parchment paper(cut in square)

Instructions

  1. Method for caramelized strawberries 1) Boil water and sugar on slow flame,add milk maid and chopped strawberries. Cook for 7-8 minutes add butter, all the ingredients should be well incorporated and mix will become thick. Switch of the gas and reserve.
  2. For salted caramel Chocolate slices
  3. Put the butter and sugar in a bowl and beat untill light and fluffy, sieve flour,rice flour,salt and work the ingredients together to form a soft dough. Roll the dough in a disk,cover it with clinge sheet and chill for 15 minute in a freezer
  4. Lightly oil the 20 cm tin,line it with a butter paper,allowing the paper to overhang the sides of tin. Roll tge dougg on a slightly floured slab and gently press it in to a tin, soothing it as flat as possible. Bake in preheated oven at 180 degree C for 20 min or till golden brown. Keep aside to cool.
  5. make the caramel. Heat butter,sugar and milkmaid in a pan, stirring continuously untill butter melted and sugar dissolved. Bring the boil, cook on high flame for 5 minutes or untill thick. Leave from heat and pour it on shortbread and keep it in fridge to set.
  6. melt the chocolate in microwave, pour it over set caramel and keep it aaide to cool and set. Cut slices with a sharp knife.
  7. Method for moon
  8. Draw a Crescent moon on a paper ,pour melted chocolate within the moon, keep it in fridge to set.
  9. Plating- Keep moon on a plate, gently pour the crushed strawberries on a corner of moon.
  10. Place caramel slices and pour spoon full of caramelized strawberries on top of slices, decorate with cherries and serve
