ABOUT Palak ki kadhi RECIPE

This yummy kadhi is a perfect accompaniment to a full meal or can be enjoyed with plain steamed rice.

Ingredients Serving: 4

  1. Curd-2 cups
  2. Palak or spinach leaves-1 cup chopped
  3. Besan-2 tbsp
  4. Garlic-4 cloves
  5. Onion-1 finely chopped
  6. Green chilly-1 finely chopped
  7. Asafoetida-a pinch
  8. Turmeric powder-1/2 tsp
  9. Red chilli powder-1 tsp
  10. Salt to taste
  11. Oil for seasoning
  12. Cumin seeds-1tsp

Instructions

  1. Mix curd and besan and whisk properly so that no lumps remain. Add a cup of water and whisk.
  2. Keep this mix to boil at medium heat .
  3. On the other gas take a pan and prepare seasoning by heating oil.Add cumin seeds and fenugreek seeds.After it sputters add onions, garlic and green chilli.Add adafoetida.
  4. Once the onions are cooked,add finely chopped spinach to this.Add a pinch of salt and cover.
  5. In the meanwhile our kadhi has started boiling,add salt and stir intermittently.
  6. You can adjust the consistency of kadhi by adding water according to the thickness you want.
  7. When the spinach is cooked add this to the kadhi and cook for 5 minutes.
  8. Garnish with coriander leaves and serve hot .
