ABOUT #Scones RECIPE

Scones are tender, buttery, flaky, small, round, lightly sweetened bread made from flour, milk and fat. Served with jam and cream.

Ingredients Serving: 10

  1. All purpose flour 2 cups
  2. Chilled buttermilk 1 cup
  3. Butter 3/4 cup
  4. Salt 3/4 tsp
  5. Sugar 2 tbsp
  6. Baking soda 1/2 tsp
  7. Baking powder 2 tsp
  8. Chopped raisins 2 tbsp
  9. Finely chopped dates 2 tbsp
  10. Mix fruit jam as needed
  11. whipped cream as needed

Instructions

  1. Mix together flour, salt, sugar, baking soda and baking powder. Mix chopped raisins and dates in flour. Melt butter in microwave for 30 seconds. Microwave for 10 seconds more if needed.
  2. Add this melted butter to chilled buttermilk. When warm butter gets into chilled buttermilk small buttery globules form.
  3. Pour this mixture into flour mix. Mix gently and gather into a stiff dough. If it is wet, add more flour, 1 tablespoon at a time. Freeze the dough for 15 minutes.
  4. Dust flour on work surface. Knead the dough for 30 seconds. Roll the dough with a rolling pin around 1 to 1+1/2 inches thick. Dust the dough with flour as needed.
  5. Cut rounds from the rolled dough using a cookie cutter. Gather the scrape and roll and cut rounds again till dough finishes.
  6. Line a baking tray with parchment paper and place all rounds on it maintaining a distance of a inch. Bake in preheated oven at 180 degree Celsius for about 12 minutes till scones get golden crisp surface.
  7. Remove from the oven and brush with melted butter at top. Cover with a kitchen towel for 5 minutes. Serve the scones with jam or cream topping.
  8. Store the excess scones in an air tight container in the refrigerator. Just microwave for few seconds before serving.
