Mushroom Fried Rice In Honey Chilly Potatoes

ABOUT Mushroom Fried Rice In Honey Chilly Potatoes RECIPE

Lovely combination of rice and potatoes.

Ingredients Serving: 4

  1. For honey chilly potatoes
  2. 4 medium size potatoes
  3. 2 tablespoon corn flour
  4. Salt to taste
  5. Oil for deep frying
  6. For the sauce
  7. 1 tablespoon finely chopped garlic
  8. 2 tablespoon finely chopped onion
  9. 1 teaspoon soya sauce
  10. 1 teaspoon vinegar
  11. 4 tablespoon fresh tomato puree
  12. 1 tablespoon chilly tomato sauce
  13. 1 tablespoon oil
  14. 1 tablespoon honey
  15. Some roasted white sesame seeds
  16. For mushroom fried rice
  17. Cook 1/2 cup of rice in enough water along with little salt, when done strain out the extra water and keep it aside.
  18. 2 pieces of white button mushroom
  19. 1 tablespoon finely chopped garlic
  20. 2 tablespoon finely chopped onion
  21. 1/2 teaspoon or according to taste red chilly paste
  22. few drops of soya sauce
  23. 1 teaspoon tomato chilly sauce
  24. 2 tablespoon finely chopped spring onions
  25. 1 teaspoon cream
  26. for serving
  27. some asparagus
  28. little oil
  29. salt to taste
  30. some black pepper

Instructions

  1. FOR HONEY CHILLY POTATOES
  2. Peel the potatoes and cut into halves.
  3. Now boil these potatoes in a big vessel along with some salt and enough water.
  4. Boil them, until they become little soft, not totally soft.
  5. When done strain them in a strainer and let them cool down.
  6. When completely cools down then scoop them out from the center, very gently, so that they do not break.
  7. Then dust these with cornflour, do not mix with hands, just shake the bowl.
  8. FOR THE SAUCE
  9. Heat oil in a pan and put gatlic, saute for a while, then add onion, cook for a minute, then add tomato puree.
  10. Cook until the tomatoes are completely cooked.
  11. In the meantime heat oil for frying the potatoes in another pan.
  12. Now slowly slide the coated potatoes in the hot oil and fry until becomes light brown.
  13. When done take them out in a plate.
  14. Now add soya sauce, tomato sauce, vinegar and honey to the tomato mixture.
  15. Mix them nicely and add the fried potatoes in the sauce, mix nicely but very gently, so that the sauce coats the potatoes evenly.
  16. Sprinkle some sesame seeds on the potatoes and the honey chilly potatoes are ready.
  17. FOR MUSHROOM FRIED RICE
  18. Heat oil in a pan and put garlic, saute for a while, then add onion, cook for a minute.
  19. In the meantime chop mushroom.
  20. Now add chopped mushroom, cook for 2 minutes, then add soya sauce, tomato sauce, red chilly paste and mix well.
  21. Then add rice, mix nicely.
  22. Then add pinch of salt, as the sauces already have salt in them.
  23. Now add spring onions and some cream for binding, mix well.
  24. The mushroom fried rice is ready.
  25. FOR ASSEMBLING
  26. Saute asparagus with little oil, salt and pepper.
  27. Now arrange the ready potatoes in a serving plate.
  28. Put the ready rice in the potatoes with the help of a spoon, very nicely by pressing them.
  29. Sprinkle some roasted sesame seeds on top of the potatoes and some on the plate.
  30. Arrange the asparagus on one side and tomato sauce on the other side.
  31. Serve hot to relish it's delicious taste.
