Ingredients Serving: 4

  1. Mushroom 200 gms finely sliced
  2. Carrots 2 chopped finely
  3. Fresh green beans chopped half cup
  4. Cabbage half cup finely chopped
  5. 1 onion finely sliced
  6. 8 garlic cloves finely chopped
  7. 2 green chillies finely chopped
  8. Small piece of ginger finely chopped
  9. Spring onions 5
  10. Spring onions leaves for garnish
  11. Rice 1 cup soaked
  12. Salt to taste
  13. Black pepper powder
  14. Green chilli sauce 1 tsp (optional)
  15. Oil 5 tbsp

Instructions

  1. First cook rice till it is 3/4 done. Keep aside to cool.
  2. Chop all the veggies finely.
  3. Heat non stick pan and add oil
  4. Once oil is hot add onions and garlic. Add spring onions with it. No leaves of it to be added.
  5. Saute on high flame till onions turn soft. Garlic smell goes away. Add green chillies and ginger.
  6. Then add mushrooms and all the veggies . Keep tossing on high flame till all the veggies rawness goes away. But it should not get soft. It should be crisp. Then add green chilli sauce if you are using.
  7. If any water has come out dry it out and then add rice, salt and pepper powder.
  8. Mix well . Keep sauteing for few minutes. Switch off gas.
  9. Garnish with spring onion leaves and serve hot with any manchurian of your choice.
