Ingredients Serving: 6
For potato outer layers
2 large boiled potatoes
1/4 cup finely chopped onion
1 green chilli finely chopped
A few mint leaves finely chopped
A few sprigs fresh coriander finely chopped
1 teaspoon coriander powder
1/2 teaspoon chaat masala
1/2 teaspoon cumin powder
1/2 teaspoon garam masala powder
1/4 teaspoon black pepper powder
3 bread slices crumbed
2 teaspoon cornflour
Salt to taste
For the inner middle layer
1/2 cup boiled macaroni
1 small tomato finely chopped
1/2 cup assorted colours capsicums finely chopped
1/2 teaspoon garlic finely chopped
1/2 teaspoon coriander powder
1/4 teaspoon red chilli powder
1 tablespoon oil
Salt to taste
For coating :
1/4 cup maida
1/2 cup water
A pinch of salt
Breadcrumbs
For parcel strings:
1/3 cup maida
Any food colour
Water
Oil for frying
Instructions
Mix all the ingredients under outer layer list and make a smooth mixture. Keep aside
For middle macaroni layer heat the oil , saute garlic , add the tomatoes and saute tomatoes till mushy. Add the capsicums and all the spices . Finally tip in the macaronis. Mix nicely and keep aside
For paste to coat , make a medium consistency paste with maida and water. Add a pinch of salt. Keep aside
Make a dough with maida add drop or two of food colour and water. Cover and keep aside
For making parcels :
Divide the potato mixture into two and roll out both separately in equal size
Spread out the macaroni mixture on one part
Put the other rolled out potato mixture over the macaroni filling. Pat it lightly with your hands.
Cut into squares. Dip each square in maida paste and roll into bread crumbs
Repeat above step for all squares.
Keep the squares in the refrigerator for half an hour.
Roll the coloured dough and cut into thin strips.
Put the strips over each parcel. You may need some maida paste for sticking the strips
You can deep fry at once in hot oil or keep in refrigerator and fry as and when needed.
Serve hot
