ABOUT Fancy Potato Parcels RECIPE

These parcels are not only a feast for the eyes but their taste is also equally overwhelming. These parcels are bound to stand out in any party .They can be made in advance.

Ingredients Serving: 6

  1. For potato outer layers
  2. 2 large boiled potatoes
  3. 1/4 cup finely chopped onion
  4. 1 green chilli finely chopped
  5. A few mint leaves finely chopped
  6. A few sprigs fresh coriander finely chopped
  7. 1 teaspoon coriander powder
  8. 1/2 teaspoon chaat masala
  9. 1/2 teaspoon cumin powder
  10. 1/2 teaspoon garam masala powder
  11. 1/4 teaspoon black pepper powder
  12. 3 bread slices crumbed
  13. 2 teaspoon cornflour
  14. Salt to taste
  15. For the inner middle layer
  16. 1/2 cup boiled macaroni
  17. 1 small tomato finely chopped
  18. 1/2 cup assorted colours capsicums finely chopped
  19. 1/2 teaspoon garlic finely chopped
  20. 1/2 teaspoon coriander powder
  21. 1/4 teaspoon red chilli powder
  22. 1 tablespoon oil
  23. Salt to taste
  24. For coating :
  25. 1/4 cup maida
  26. 1/2 cup water
  27. A pinch of salt
  28. Breadcrumbs
  29. For parcel strings:
  30. 1/3 cup maida
  31. Any food colour
  32. Water
  33. Oil for frying

Instructions

  1. Mix all the ingredients under outer layer list and make a smooth mixture. Keep aside
  2. For middle macaroni layer heat the oil , saute garlic , add the tomatoes and saute tomatoes till mushy. Add the capsicums and all the spices . Finally tip in the macaronis. Mix nicely and keep aside
  3. For paste to coat , make a medium consistency paste with maida and water. Add a pinch of salt. Keep aside
  4. Make a dough with maida add drop or two of food colour and water. Cover and keep aside
  5. For making parcels :
  6. Divide the potato mixture into two and roll out both separately in equal size
  7. Spread out the macaroni mixture on one part
  8. Put the other rolled out potato mixture over the macaroni filling. Pat it lightly with your hands.
  9. Cut into squares. Dip each square in maida paste and roll into bread crumbs
  10. Repeat above step for all squares.
  11. Keep the squares in the refrigerator for half an hour.
  12. Roll the coloured dough and cut into thin strips.
  13. Put the strips over each parcel. You may need some maida paste for sticking the strips
  14. You can deep fry at once in hot oil or keep in refrigerator and fry as and when needed.
  15. Serve hot
