ABOUT Loose mohanthal RECIPE

Loose Mohanthal is a traditional mithai with the rich flavour and melt-in-the-mouth texture of ghee-roasted besan.  This sweet is served to Lord Krishna who keeps lalji's seva at home.

Ingredients Serving: 6

  1. 1 cup finely ground chana dal flour
  2. 1/2 cup coarsely ground chana dal flour
  3. 2 tbsp hot milk
  4. 1 cup ghee
  5. 50g mava grated
  6. 1 tsp green cinnamon and nutmeg powder
  7. Sugar syrup-
  8. 1 cup + 2 tbsp sugar
  9. Few saffron strands
  10. Water as required
  11. For garnishing-
  12. Cashews and almonds

Instructions

  1. Take both the chana dal flour in a bowl.
  2. Make a small cavity in the middle.
  3. Pour hot milk and above it pour 1 tbsp melted ghee in the cavity made.
  4. Cover the milk and ghee part with the chana dal flour properly and keep it aside for 10 mins. (This is called as "dhabo devo" in Gujarati)
  5. Meanwhile keep the sugar syrup for being cooked.
  6. Add sugar in a container and add water just enough to cover the sugar in the container.
  7. Add saffron strands and let it get boiled.
  8. The sugar syrup should be of 1.5 strands which will be a bit thick and sticky too.
  9. Now mix all contents of the bowl in which chana dal flours are there.
  10. Now mash all the contents properly with our hands.
  11. It should be done in such a way that milk and ghee is applied evenly on the flours.
  12. Now heat the remaining ghee in a non-stick pan.
  13. After it melts add the mashed flour mixture to the ghee.
  14. Heat this mixture on low flame for 10-12 mins while constant stirring.
  15. After it gets golden brown colour switch off the gas.
  16. Add grated mava to the mix and mix it well.
  17. Add green cardamom and nutmeg powder to it.
  18. After the bubbling settles down in the flour add the sugar syrup made.
  19. Mix it properly and cook for more 3-4 mins.
  20. Serve them in serving bowl and garnish with cashews and almonds.
  21. The loose Mohanthal is ready to be served!
