Ingredients Serving: 2

  1. Gnocchi – 200 grams
  2. Olive oil – 1 tsp
  3. Parmesan Cheese – As required
  4. Pepper – As required
  5. For the Mushroom Sauce
  6. Olive oil + butter – 1+1 tsp
  7. Garlic – 8-10 cloves (chopped)
  8. Assorted Mushroom – 1 cup (sliced) ( You can use any mushroom you like; I used the following mushrooms)
  9. Button Mushroom – 4-5
  10. Eryngii mushroom – 1
  11. Mushroom black fung or Cloud ear Fungus – 4-5
  12. White wine – 1/2 cup (optional, but preferable. You can use water too, I have even used whiskey… it’s all good)
  13. Fresh Cream – 1 cup (as per preference)
  14. Salt & Pepper – to taste

Instructions

  1. Heat a sauce pan, add the olive oil and butter, when hot add the garlic and before it browns add the mushrooms and sauté it.
  2. A bit of salt and pepper.
  3. When it looks limp, add the white wine and cook till the wine is almost absorbed.
  4. Add the fresh cream and give it a good stir until it is thick.
  5. Check seasoning and add more if required.
  6. Heat a skillet, add olive oil, add the gnocchi and stir fry till its is brown and plump.
  7. Add the sauce to the gnocchi and top with grated parmesan cheese.
  8. Enjoy.
