Hilsha fish, regarded as the king of fish is one of the most sought after fish due to its unique flavor and rare availability. And when the star ingredient is so bold in flavours, I always believe in keeping it simple, ortherwise the flavors get muddled with the added condiments. Heres one simple dish with bare minimum ingredients, and very less cooking time

Ingredients Serving: 4

  1. 1/2 kg Illish fish
  2. 1cup black and yellow mustard paste
  3. 1/2 cup curd
  4. 1/2 teaspoon Kala jeere
  5. 4 Green chillies slit
  6. Salt to taste
  7. Turmeric 1/2 teaspoon
  8. 1/2 cup Mustard oil

Instructions

  1. Heat the oil and crackle green chillies and kala jeera
  2. Whisk the curd with salt and turmeric and pour it to the tempered oil
  3. Add the fish and simmer on low flame till the curd has completely released it oil, around 8 to 10 mins or so
  4. When sufficient oil has seperated out, add the mustard paste and 1/2 cup of water.
  5. Simmer it on medium flame till the water has completely dried off and oil resurfaces again
  6. Adjust the consistency as per your liking, fish has already been well cooked by now. There's no need to pre fry the fish.
