Ingredients Serving: 2

  1. Rice(Basmati)-1 cup
  2. Mint leaves-1 cup
  3. Onion-1
  4. Green chilli-2+2
  5. Curry leaves-few
  6. Cashewnut-8
  7. Tomato-1
  8. Ginger & garlic paste-1 teaspoon
  9. Fennel seeds-1+1 teaspoon
  10. Turmeric powder-1 tablespoon
  11. Chilli powder-1 tablespoon
  12. Cumin powder-1 tablespoon
  13. Coriander powder-1 tablespoon
  14. Garam masala powder-1 tablespoon
  15. Cloves-2+2
  16. Cinnamon-1 inch
  17. Coriander leaves-few
  18. Oil-3 teaspoon
  19. Salt ~ 2 tablespoon
  20. Water ~ 2 cups

Instructions

  1. Clean and soak the rice for 30 mins
  2. To prepare mint paste:Grind the following ingredients such as Mint,Fennel seeds,Cloves,Cinnamon,Green chilli and few curry leaves.Mint paste ready.
  3. Heat the cooker and add oil,fennel seeds,cloves,copped onion,green chilli,curry leaves,cashew and fry it well.
  4. After that add chopped tomato and ginger & garlic paste and fry it.
  5. Now add mint paste,turmeric powder,cumin powder,coriander powder,garam masala powder,chilli powder,salt to taste and cook for 2 minutes.
  6. Add water in the ratio (rice:water 1:1.5) and cook for 10 minutes.
  7. Finally add rice and coriander leaves.After the bubbles came close the cooker for one whistle in medium flame.
  8. Open the cooker after 15 mins.The fresh and healthy Mint rice is ready.
