There are so many dishes that my mother cooks the best and gatta curry is one of them that its my favourite. I can never forget the flavour and aroma of my mother's dishes.

INGREDIENTS TO MAKE GATTA
1 cup besan
1/4 tsp Jeera
1/4 tsp Sauf ( fennel seeds)
1/4 tsp Ajwain (carrom seeds)
1/4 tsp Coriander Seeds
1/4 tsp Haldi Powder
1 tsp Red Chilli Pwder
1 tsp Salt
1 Tbsp Oil
1 Tbsp Desi Ghee
2 Tbsp Water or as required
3 Tbsp Curd
1 liter Water To Boil Gatta
INGREDIENTS TO MAKE GRAVY
2 Onions chopped
2 – 3 Tomatoes
3 Green Chillies
1/2 inch Ginger
2 -3 Garlic Pods
1/4 Cup Curd ( 4 tbsp)
1 tsp Red Chilli Powder
2 tsp Coriander Powder
1/4 tsp Haldi Powder
1 tsp Kasuri Methi (Roasted)
2 tsp Salt
INGREDIENTS TO MAKE TADKA
2 Tbsp Desi Ghee
A Pinch Of Hing
1/4 tsp Kashmiri Red Chilli Powder
1/4 tsp Sauf (Crushed)
1/4 tsp Jeera(Crushed)
Instructions
Mix all the ingredients for gatte together and make a normal dough, using water as needed.
Knead the dough well, let it rest for 10 minutes.
Divide the dough into 4 parts and roll them in calendar about half inch thick.
Bring about 4 cups of water to boil in a pan on medium high heat. Gently drop the Gatte logs in boiling water, and cook them for about 12-15 minutes’ gatte should be floating on the top and will have bubbles all around.
Take them out from water and save the water, this will be used for making gravy. let them cool for few minutes and cut them in about half inch-thick slices.
Finally Chop the onion
and grind tomato, ginger garlic and green chillies into puree
Heat 3 tbsp oil, add onions and cook till golden brown on medium heat
Add tomatoe ginger paste and cook till the oil seperates on low to medium heat.
In yoghurt add all the dry spices and mix well
Add this yoghurt spice mix to the tomatoes and cook for 5-7 minutes, stirring constantly
Add the gatte and roast or cook for 3-4 minutes, stirring constantly
Add leftover water of boiled gattas
Cook for 5-7 minutes on medium heat
For tadka- heat ghee, add cumin, fennel seeds and Kashmiri chilli powder on low heat
Add this tadka to gatta curry
Enjoy with roti or rice
