Ingredients Serving: 2

  1. Rajgira tortillas: 1/2 cup rajgira flour
  2. 1/2cup boiled & mashed raw bananas
  3. 1tsp coriander leaves
  4. 1tsp ginger chilly paste
  5. rock salt to taste
  6. cumin seeds 1 tsp
  7. olive oil..1 tsp
  8. palak paneer stuffing..
  9. 1 cup finally chopped spinach leaves
  10. 1cup fresh homemade cruble paneer
  11. 1tsp rock salt
  12. 1tsp pepper powder
  13. 1tsp ginger chilli paste
  14. 1/2 tsp red paprika flakes
  15. 1tsp olive oil..
  16. 1tsp olive oil..
  17. Fresh Tomato Salsa Ingredients:
  18. 3 tomatoes,
  19. chopped 1 green chili,
  20. chopped 1/2 cup fresh coriander leaves
  21. salt pepper
  22. lime juice 1 tsp

Instructions

  1. Rajgira tortillas...Mix all ingredients well .knead the dough with little amt of water..
  2. from the dough make 2 balls.
  3. Take the 1 ball roll it like round chapati
  4. lightly Roast it on hot tawa on both sides
  5. Rajgira tortillas r ready .
  6. palak paneer stuffing In a pan add olive oil..spinach leaves. cook for 5 mins..
  7. add rock salt,ginger chilli paste,pepper powder,red paprika, turn off the gas. add cruble paneer..palak paneer stuffing is ready..
  8. Fresh tomato salsa.. : In a bowl, put in all the ingredients, tomatoes, green chili, fresh coriander and mix well. Stir in salt, pepper and lime juice. Mix well.
  9. Assembling quesadillas.. Divide the stuffing into 2equal portions. Take a tortilla and place a portion of the mixture over one half of the tortilla
  10. . Fold the tortilla covering the mixture into a half moon shape.
  11. . Place this on the moderately hot pan and smear a little oil over the tortilla.Press the tortilla slightly for a few seconds and allow the cheese to melt
  12. Flip the quesadilla to the other side and smear some oil over it. Cook until nice brown spots appear and the quesadilla is slightly crisp.
  13. Take care of the heat source for the pan so as to not to blacken the tortilla. Cut into triangles.
  14. garnish with grated cheese.. serve with fresh tomato salsa..
