Yummy homemade cheesy Quesadillas with homemade tortillas that just melt in your mouth makes for an awesome kids recipe that can never fail to impress. Different kinds of cheese can be used instead of just Mozzarella alone and relish. It is simple as well as an easy one too. Takes very little of your time and the best part is that the tortillas can be made in advance and stored in the freezer in zip lock bags. They last upto 2-3 months and you can be rest assured about the quality too. Happy Cooking Everyone!

Ingredients Serving: 8

All purpose flour 2 cups
Salt 1 tsp
Olive oil 2 tbsp
Water 3/4 cup
Mozzarella cheese shredded 2 cups
Red chilli flakes 1 tbsp

Instructions

Make a smooth dough for making the tortillas using the given ingredients.
Cover and keep aside for 15 minutes.
Divide the dough into 12-14 balls.
Roll into thin discs and roast on a hot griddle on a low to medium high heat.
Do not over roast. Light Brown spots must appear evenly on them. That's it.
Stack them up in a casserole to keep them warm and soft.
Now place shredded cheese on one side of each tortilla and sprinkle some mildly hot chilli flakes and cover with the other half of it.
Let the cheese melt before cutting in the centre thus getting 2 Quesadillas at one time.
Keep the flame always on low.
Serve them to your lovely kids at breakfast or brunch or even as an after school snack.
