For thepla; in a large bowl take whole wheat flour, gramflour, chopped Fenugreek leaves, chopped coriander leaves, chopped green chillies, chopped ginger, turmeric powder, cumin powder, coriander powder,curd, salt,oil,mix it well .
Now add water little by little (as required),knead into a semi-soft dough, cover and rest it for 10 minutes.
Divide the dough into small equal portions,roll out into thin discs;heat tawa, brush it with little oil and roast theplas from both sides one by one.
For stuffing;in a non-stick pan heat oil, add chopped garlic, chopped onion saute it for a while,then add all the vegetables,red kidney beans and cook it for 4-5 minutes.
Add red chilli powder,chilli flakes,paprika powder,cumin powder,salt,tomato ketchup and fry it for couple of minutes,then add 1/2 cup water , cover and cook it for 4-5 minutes.
Now add grated cottage cheese , cook it till the mixture dries.
Now put off the flame,add chopped parsley leaves.
To prepare a Quesadilla,take a thepla spread some grated cheese ,then spread 3-4 tbsp stuffing on it .
Again spread grated cheese over the stuffing.
Now cover it with another thepla.
Heat non-stick pan ,add butter,place Quesadilla carefully on pan ,fry it till it turns crisp and golden brown in colour.
Cut into wedges.
Serve hot.
