ABOUT Veggie Power Balls RECIPE

Veggie Power Balls is a favourite recipe among children. It consists of veggies, almond meal, cheese and potato. It is not only easy to prepare but also has a good nutritive value from the veggies, almond meal and cheese. Though easy to make, yet it requires some skill. Just in case the balls break or open up while frying then you need to add more cornflour or bring the oil to the required temperature

Ingredients Serving: 4

  1. Boiled potato 1 large peeled and mashed
  2. Almond meal 1/8 cup
  3. Corn kernel boiled or tinned 1/3 cup
  4. Onion 1/4 cup finely chopped
  5. Carrot 1/4 finely chopped
  6. Capsicum 1/4 cup finely chopped
  7. Cheddar cheese 1/4 cup grated
  8. Garlic powder 1/2 teaspoon
  9. Ginger powder 1/2 teaspoon
  10. Coriander leaves a few finely chopped
  11. Salt to taste
  12. Garam masala powder (optional 1/2 teaspoon
  13. Black Pepper powder 1/2 teaspoon
  14. Oregano powder 1 teaspoon
  15. Cornflour 1 heaped teaspoon
  16. Bread crumbs 1/2 cup or as needed
  17. Oil for frying

Instructions

  1. In a wide vessel mix together boiled and mashed potato, almond meal, corn, onions, carrot, capsicum, coriander leaves and cheese
  2. To this add dry spices such as salt, black pepper powder, garam masala powder, oregano powder, garlic powder, ginger powder and salt.
  3. Also add the bread crumbs and corn flour
  4. Now mix the whole mixture nicely till well combined.
  5. Grease your palms and form small balls with this mixture.
  6. Roll the balls in bread crumbs
  7. Keep these balls in the fridge for twenty minutes or you can even fry them at once.
  8. For frying heat the oil till hot and fry the balls till crisp and golden brown in colour.
  9. Yields 12 - 14 balls
  10. Drain the balls on absorbent paper and serve hot with chutney or ketchup
