Punjabi badam pista phirni is such a delicious, creamy, yummy dessert and it's a must during festivals.

Ingredients Serving: 6

  1. Full cream milk 1 litre
  2. Basmati rice 1/4 cup
  3. Sugar 1/3 cup
  4. Cardamom powder 1 teaspoon
  5. Blanched pistachios 1/4 cup
  6. Blanched almonds 1/4 cup

Instructions

  1. Wash and soak the Basmati rice in little water for 1/2 hour to 1 hour.
  2. Grind it coarsely in a mixer grinder and keep aside.
  3. Take full fat milk in heavy bottom pan and bring it boil with occasional stirring.
  4. Once the milk comes to boil add the ground rice slowly and stir it well.
  5. Stir it frequently so that the rice doesn't form lumps and the milk doesn't stick to the bottom of the pan.
  6. Scrap the sides of the pan and cook the kheer till the rice is done and the milk has reduced.
  7. Add sugar and cardamom powder.
  8. Stir it for another 5 minutes until desired thickness is achieved.
  9. Add the pistachios and almonds, turn off the flame.
  10. Transfer to serving bowls. Allow it to cool down and refrigerate.
  11. Garnish with pista and almonds, serve cold.
