Ingredients Serving: 2

  1. Maize flour one Bowl
  2. Suji or rice flour 1/2bowl
  3. Eno one pouch
  4. Salt to taste
  5. Coriander leaves chopped
  6. Green chillies paste
  7. Sure buttermilk
  8. Oil
  9. Rai for tadka

Instructions

  1. Make a semithick batter by mixing maize flour and Suji or rice flour .solvent here used is only buttermilk and no water is used
  2. Keep the batter for 40min to rest
  3. Now add salt ; coriander leaves chopped; chilli paste and Rai tadka
  4. Mix well with stirer
  5. Grease idli plates with oil
  6. Add Eno to the batter
  7. Mix a little otherwise bubbles will go out and fluffiness is not achieved
  8. Add batter into the idlies plates
  9. Steam for 15-20min.
  10. Check after 15min by putting a fork if it comes out clean then put off the flame and take them out
  11. Otherwise cook for 5min more
  12. Yummy and healthy homemade maize idlies are ready to serve
  13. Serve them hot with chatni or sauce
