ABOUT Maja Blanca/Filipino Coconut Pudding..... RECIPE

A Filipino dessert that is originally made with cornflour, coconut milk and sugar. The original recipe does not contain corn and condensed milk, it is entirely my idea to make it more creamy. Very simple to make and you are done with a luscious dessert for potluck parties or New Year Eve. Try this dessert that involves common ingredients and is yet a lipsmacking one at that..

Ingredients Serving: 10

  1. Coconut milk 3 cups
  2. Cornflour 1/2 cup
  3. Sweet corn kernels 1 cup
  4. Condensed milk 1/2 cup (Sugar 1/2 cup)
  5. Grated fresh coconut 1/2 cup

Instructions

  1. Mix all the ingredients in a pan until lumpfree.
  2. Except grated coconut.
  3. Bring it to a rolling boil on a high heat.
  4. After it starts to boil, lower the heat and simmer.
  5. Keep stirring it until it thickens for nearly 20 minutes.
  6. Sugar can be added instead of condensed milk.
  7. Grease a glass dish with little butter.
  8. Pour this thickened mix into it.
  9. Chill in the refrigerator until set.
  10. Toast the grated coconut in a pan until a slight change in colour is seen.
  11. Top it up with the toasted grated coconut.
  12. Slice it and serve.
