ABOUT Black Seasame - Coconut milk Pudding RECIPE

Delicious Thai dessert is low-fat, low-carb, vegan and gluten-free. While black sesame seeds are naturally sweet and have a deliciously unique flavor, they are also very healthy, being an excellent source of calcium, iron, magnesium, protein, and essential fatty acids helping to keep your skin and hair soft.

Ingredients Serving: 6

  1. 1/2 cup black sesame seeds
  2. 1/2 cup unsalted dry roasted peanuts
  3. 3 cups water
  4. 1/4 tsp salt
  5. 1/2 cup brown sugar
  6. 1 tsp vanilla essence
  7. 1/3 cup coconut milk
  8. 1 1/2 tbsp arrowroot powder dissolved in water

Instructions

  1. Heat water with salt, added in a pot over medium-high heat.
  2. Grind the sesame seeds well with 1 tsp brown sugar to make a fine oily paste.
  3. Add the ground sesame seeds to the hot salted water and stir, mixing the seeds well into the water.
  4. Grind nuts into the fine powder and add to water sesame seeds mix.
  5. Bring the sesame-nut water to a boil, then reduce to medium heat. Simmer the mixture for 5-8 minutes.
  6. Add the remaining sugar, vanilla, coconut milk, and the arrowroot powder dissolved in water.
  7. Stir continuously. The dessert should thicken within a minute or two.
  8. Pour into dessert cups or bowls while still warm.
