ABOUT Coconut Pudding RECIPE

A Sri lankan coconut jelly pudding.

Ingredients Serving: 4

  1. Coconut milk - 1 cup
  2. Jaggery - 1/2 cup
  3. Vanilla - 1/2 tsp
  4. Cardamom powder a pinch
  5. Agar agar - 2 tbsp
  6. Cornflour - 1 tbsp

Instructions

  1. Soak agar agar in water for 10 mins and then heat on low flame till it boils.
  2. Mix coconut milk and jaggery in a pan and keep on low flame. Add vanilla and cardamom. Put in the soaked agar agar and keep stirring till the agar agar gets dissolved. (In case there are bits left then strain and put back in the pan.)
  3. Mix cornflour in a little water and pour into the coconut milk mixture.
  4. Cook till it starts getting thick.
  5. Pour into a mould, cool and refrigerate.
