Ingredients Serving: 5

  1. ½ kg mutton pieces
  2. 2 onions sliced
  3. 12 cloves of garlic
  4. 1 inch ginger chopped
  5. 2 tomatoes
  6. 2 tsp of raw grated pappaya
  7. 1 and 1/2 tsp red chilli powder
  8. 1/2 tsp turmeric powder
  9. 1 tsp coriander powder
  10. 1 tbsp whole garam masala (clove, pepper corn, cardamom, cinnamon, bay leaf)
  11. 1 tsp cumin powder
  12. 4 tbsp ghee

Instructions

  1. Heat oil in cooker, add the onion slices, garlic cloves, chopped ginger along with whole garam masala. Fry them until the onions  and garlic become light pinkish brown in colour. Then remove and let it cool.
  2. In the same oil/ghee, add in red chilli powder and turmeric powder with a little water and cook it for a minute. Add the mutton pieces and grated raw papaya to it and fry for a few minutes. Note to keep the flame low while cooking.
  3. In the mean time, grind the fried onion mixture along with tomatoes in a blender. Then add this paste into the meat in the cooker. Add coriander, cumin powder and salt to taste and continue frying this mixture till the oil/ghee separates.
  4. Pour in water according to the consistency of the gravy required. (have added around 1 glass of water) Cover the lid and let it cook till 10 whistles blow.
  5. Garnish with coriander leaves and serve it warm.

is the raw papaya necessary in this recipe? Can we omit it if it's not available?
