ABOUT Dibba rotti RECIPE

This is a traditional Andhra breakfast which is made from rice rawa and lentils.Supercrispy from outside and soft from inside ,it is one of our favourite dish.

Ingredients Serving: 4

  1. Urad daal-1 cup
  2. Rice rawa/idli rawa-2 cups
  3. Cumin seeds-1 tsp
  4. Curry leaves-8-10
  5. Green chilli-2
  6. Salt
  7. Oil for cooking

Instructions

  1. Take 1 cup of urad daal.Wash and soak it.
  2. Take 2 cups idli rawa and soak it also in a different bowl.
  3. After soaking for 2 to 3 hours,grind the daal in mixer.Add as little water as possible while grinding.
  4. Drain the idli rawa.
  5. Now add the ground daal paste in this rawa and mix well.
  6. Cover and keep for an hour.
  7. Before preparing add cumin seeds,curry leaves,finely chopped green chillies and salt to the batter.
  8. Now take thick aluminium pan and add 2 tbsp oil in it.Do not use nonstick pan for this as the outer coat will not become crisp if you do so.
  9. Pour 2 to 3 big ladles of batter when the oil heats up.
  10. Keep slow flame.Cover and cook for 8 to 10 minutes.
  11. You will see that the outer crust has browned.
  12. Slowly turn the dibba rotti with a spatula to cook other side also.
  13. See how nicely the base has browned.
  14. Now do not cover,let it cook for 5 minutes.
  15. See the other side has also browned and become crisp.
  16. Now remove in a plate and cut it before serving.See how soft it is from inside.
  17. Serve with coconut ginger chutney.

I t has to ferment minimum 4 to5 hours Like idly then only it tastes good and fluffy
