Andhra Ulli Gare / Vada is a must try traditional breakfast recipe . It is also offered as Naivedhyam to the deity during festivals. In South India , this dish is served as a breakfast recipe along with Idli. Ulli Garelu looks crunchy outside yet is soft and fluffy when seen inside. Each bite of this vada tastes heavenly when served with Coconut chutney/ Sambhar/ Allam(Ginger) Pacchadi

Ingredients Serving: 4

  1. Black Gram / Minapappu / Urad dal ( whole ) – 2 cups
  2. Salt to taste
  3. Onions (finely chopped ) – 1 cup
  4. Oil – to deep fry
  5. Green Chilly ( finely chopped ) – 1 teaspoon
  6. Ginger (Sliced) – 1 teaspoon

Instructions

  1. Soak the Black gram in water for 4 to 5 hours / overnight.
  2. Drain the water completely and in a dry mixie jar make a smooth batter of it.
  3. Add salt to the vada batter. Mix well.
  4. Transfer the batter into a large vessel. Add the chopped onions , sliced ginger, chopped green chilly and mix well.
  5. In the meanwhile , heat oil in a kadai over a medium flame.
  6. Wet your hand with water and take a medium lemon sized portion of the batter. Form a ball of it . Gently press the ball and flatten it into round shape. Make a hole in the center.
  7. Carefully , place them into the hot oil. Fry them on both sides until they turn golden in color and are cooked well inside.
  8. Serve hot ulli garelu / lentil dumplings with Ginger chutney or Coconut chutney/ Cilantro Chutney / Sambhar.
