Ingredients Serving: 4

  1. Multigrain flour 1/2 cup
  2. Whole wheat flour 1 + 1/2 cup
  3. Spinach leaves 10 , cleaned
  4. Fenugreek leaves 1/4 cup clened
  5. Salt to taste
  6. Green chilies 2 - adjust
  7. Ginger 1 inch
  8. Cumin seeds 1 teaspoon
  9. Red chili powder 1/4 teaspoon
  10. Garam masala 1/4 teaspoon
  11. Chat masala 1/2 teaspoon
  12. Ghee 1 tablespoon
  13. Oil for shallow frying
  14. Water as required for kneading flour

Instructions

  1. Grind both the leaves , green chilies, ginger to form smooth puree
  2. In a bowl, add flours and spices. Mix well. Add ghee and gently rub the mixture until crumbly
  3. Add puree and knead a smooth dough.
  4. Heat the tawa. Divide dough into equal portions , roll them into parathas. With the help of knife make small slits on parathas to make it crispy
  5. Place it on hot tawa and cook on both sides until golden brown over medium flame. Drizzle oil on top and edges
  6. Crispy healthy green parathas are ready to be served
