Ingredients Serving: 5

  1. Maida 2 cup
  2. Onion grass 2 bundles
  3. baking soda 1/4 tsp
  4. 2 tsp oil + additional for drizzling
  5. boiled potatoes 1 cup
  6. cumin 1 tsp
  7. salt to taste
  8. 1/2 tsp sugar
  9. For Methi Aaloo
  10. Potatoes 2 cup, cut into discs
  11. jeera powder 2 tsp
  12. chili paste 2 tsp
  13. Turmeric powder 2 tsp
  14. ginger paste 2 tsp
  15. methi 10-15 leaves paste
  16. coriander 10-15 leaves paste
  17. lemon juice 1 tsp
  18. salt to taste
  19. 1/2 tsp sugar

Instructions

  1. In a bowl, add 2 cups of maida, baking soda, salt, sugar with chopped onion grass with adequate water and knead a smooth dough. Coat dough with oil and rest for 20 minutes
  2. Heat oil in a pan. Splutter cumin seeds . Add potato and stir fry until golden brown. Add ginger paste , coriander paste methi paste turmeric powder , chili powder, salt and sugar. Mix well. Add 1 cup of water, bring to boil. Cover and cook for 10 minutes or until potatoes are tender.
  3. Add lemon juice and mix well. Curry is ready
  4. Divide dough into equal portions and roll into rotis
  5. Heat tawa and place theplas and cook on both sides until golden brown. Drizzle oil or ghee on top and edges. Serve hot with Aaloo Methi and curd
