Ingredients Serving: 5

  1. 1 cup chickpeas, soaked overnight and drained
  2. 1 cup chopped parsley
  3. 1 cup chopped cilantro
  4. 1 tsp coriander powder
  5. 1/2 tsp cumin powder
  6. 1/2 tsp hot paprika
  7. 1/4 tsp all spice
  8. 1/2 tsp turmeric powder
  9. 1/2 tsp garlic powder
  10. 1 tsp salt
  11. 1/2 tsp baking powder
  12. 1 tsp lemon zest(optional)
  13. 2 tbsp extra virgin olive oil
  14. 1/4 cup breadcrumbs

Instructions

  1. Pre-heat oven to 200. Grease muffin tray or line with parchment paper
  2. Combine all ingredients, except olive oil in the food processor.Pulse a few times until all the ingredients are well combined, but not completely smooth.Transfer mixture to a bowl, add olive oil and mix well.
  3. Grease your palms , make small balls and place them in the mini muffin pan. If the mixture is loose, add breadcrumbs and mix again to form the smooth balls.
  4. Bake for 15 minutes. Flip the falafel balls when 50% time is elapsed
  5. Serve hot with pita bread, burger buns, tahini sauce etc
