Ingredients Serving: 2

  1. 300 grm pumpkin cut in long
  2. 1 capsicum
  3. 1 carrot
  4. 1 onion
  5. 1 tomato deseeds
  6. 1 inch ginger
  7. 3 to 4 garlic
  8. 2 fresh red chilli
  9. 5 to 6 strips of raw mango
  10. 1/2 tsp mustard seeds
  11. 1/4 tsp carom seeds
  12. 1 tsp cumin seeds
  13. 1 tsp fennel seeds
  14. 1 tsp corriender seeds
  15. 1 dry red chilli
  16. 1/2 tsp dry mango powder
  17. 1/2 tsp saunth powder
  18. Salt to taste
  19. Oil for cooking

Instructions

  1. First cut all vegetables cut in long size,now hot oil in pan and fry the pumpkin, capsicum and carrot in high flame but not to over cook and not too burn. When done and keep aside it.
  2. Now roast cumin,fennel, coriander seeds and red chilli and transfer in mixer jar and make powder of it.
  3. Now heat oil in pan add carom and mustard seeds when sluppter,add onion when translucent add slant cut garlic and ginger fry for 30 seconds,add tomato and raw mango strips,fresh red chilli strips,salt and stir it for a minute.
  4. Now add dry roasted masala,saunth powder and mix well and stir for a minute and mix.
  5. After a min switch of gas,now stir fry mix vegetables ready to serve,now serve this hot with chapati.
